Rissoto Agli Asparagi Recipe

Recipe for 4 Servings

  • 500mg Arborio or Carnaroli rice
  • 2 medium carrots, 2 onions, 2 celery stalks, 1 fennel bulb (optional)
  • 2 bay leaves
  • 2 shallots bulbs chopped
  • 1/2 pound asparagus, though stalk cut off
  • 2 ounces extra virgin olive oil
  • 1 cup dry white wine
  • 2 TBSP butter
  • Juice of 1 lemon
  • Salt & pepper
  • Parmigiano Reggiano and/or Pecorino Romano

Instructions:

  1. Make a generous amount of vegetable stock with the carrots, onions, celery, fennel, bay leaves, salt & pepper.
  2. You may add a box of vegetable stock or just use the fresh vegetables.
  3. After the stock is flavorful, at least an hour of soft boiling, remove all the solids and keep on low heat.
  4. Put 1 celery stalk and 1 carrot from the sock in a blender and pulse.
  5. Cut asparagus tips about 1 ½ inches long and keep separated. Chop the stalks and put in a blender with some stalk and save.
  6. Start sweating the shallots in a large and shallow pot with olive oil until soft and then add the rice.
  7. After toasting rice for a couple of minutes add the blended vegetables and cook off some of the water.
  8. Add the white wine and burn off the alcohol.
  9. Start adding enough broth to cover the rice and bring to a very gentle boil.
  10. Keep on stirring and adding broth for about 22-23 minutes and when you are 10 minutes off add the lemon juice, asparagus tips and asparagus puree.
  11. Keep adding little stock until the end of the cooking time.
  12. Taste the rice, it should be firm but not crunchy and turn off.
  13. Add generous amount of Parmigiano and/or Pecorino Romano cheese.
  14. Make sure the rice is not too dry as it will keep on cooking and drying for a few minutes.
